A silky, full-flavoured Minervois from winemaker Sylvain Delabre. The Syrah-based blend is aged 200 metres underground in the vast Cabrespine chasm beneath the hills north of Carcassonne, where cool, stable conditions help the wine settle and mature. Expect red and black fruit, wild herbs, spice and a long, smooth finish.
